Three pretty clean bones...

One of two crock pots full of pork goodness. You taste the tender pork, a little saltiness from the Teriyaki, and the sweetness of the pineapple. And as a bonus, I only used three of the butts. Will either pull the other tomorrow or vacuum seal and freeze.

The injection/marinade sounds great, i was wondering why you did just black pepper for your rub then i remember the injection had salt in it.
 
That looks amazing, would love to hear what the marinade / injection was made of. Thinking this would work wonderful for an upcoming party.
 
All set up and cold beer in hand. Bride tasted the pork and loves it. All pressure off...

I based the Teriyaki recipe off the following:

1/2 cup soy sauce
1/4 cup water
2 tablespoons sweet rice wine
1 tablespoon, plus 2 teaspoons brown sugar
1/4 cup sugar
1 1/2 teaspoons minced garlic
1 1/2 teaspoons minced ginger

That makes 1 cup. I did that times 8. I also tweaked it a bit to taste and added some Hoisin sauce.

Pineapple Salsa made... Have a question though. I plan on keeping this cold either via the fridge or on ice when we get to the bar. Is it ok to serve something with acid (lemon and pineapple juices) in it in the stainless steel bowl? If not, I need to split it between two other bowls.

Stainless should be fine. Your salsa looks great! What's in it?
 
I have to say, when the bride asked me for a Luau spread and no spicy, I did a test run and I fell in love with that pineapple salsa. I love spicy and heat. I made that for her and she still couldn't eat it. But I (and a lot of other heat lovers) thought it was great. I won't make it all the time, but it is in my rotation...
 
Oh, and I am so tired, and a little buzzed, I am going to sleep now. I'll clean up in the morning. Thanks again y'all...
