Cooked this at the lake last week while camping...
I didn't have one single bite while fishing but brought some fish filets with me from my camp trip last fall. Had my heart set on campfire fish I guess. :)

I cut the fish into nuggets then coated with a cornmeal, flour, cayenne, salt, lemon pepper mix.

heated the oil on the tractor rim...

made my hushpuppy batter, cornmeal a little flour, baking powder, salt, one egg, a little milk, jalapenos, green onions, dash of cayenne and whole kernels of corn. I think that was all...

threw another log on the fire. It was pretty chilly at night. Into the high 20's, low 30's.
The fire felt pretty good!

Later that night I was hungry, so I speared a few leftover pieces of fried catfish and hushpuppies and roasted them over the fire. They really tasted good that way!!

I experienced my first hot & fast, caveman style hushpuppy ... (it fell in the fire) Wasn't as tasty as I thought it was going to be! :tape::-D

Even though I froze and didn't catch any fish, I really enjoyed the camp out. :)

Thank you Peeps and Farmer! It was nice to get out there and relax for a few days. (even though I froze). :-D
 
My family and I are going camping in a couple weeks, truly can't wait! Your pictures just make me want to get out of here for a few days even more!

So VERRRY NICE! I have a freezer full of crappie that needs cookin.They are starting to bite again around here.Out with the old/ in with the new.Awesome pics/ girl!
 
Jeanie, your food and the scenery were almost as beautiful as you. Almost. Thanks for sharing. When the days are that nice, OT catching anything doesn't hurt as much.
 
Wow that looks so good. I have not had catfish fried while camping in many years.
I laughed pretty hard when I saw your coozy cup labeled "mine" because I had one identical to yours with "MINE" on it but somebody else thought MINE meant "Theirs".
 
that looks awesome Jen.... now those are some good looking hushpuppies.... and the catfish looks great too!!!!!! what a beautiful view at the lake... . I have some bass that I might just cook tonight since you got fish on my mind again.... I just ate catfish three days ago but I never get too much of it..... :)
 
Jeanie, we love a big mess of fried fish here and good planning on taking some with you.

Surprised that the temps were so low but that's a fine lookin' campfire!
