3 packer briskets, 4 butts, 4 racks of ribs, 16+ thighs..( if Im doing breast I buy 6-8 bone in splits (debone myself)or 16 whole wings or 2 family packs of drum sticks)
 
Follow up question...

Another noobie follow-up – How often do you end up needing the 2nd brisket or the 2nd pork butt, do you really end up needing the back-up?

1 brisket that I name wagyu 2 butts,3 st.louis cut ribs and 15 thighs. I hate trimming chicken.

A couple of times..... glad I had the 2nd one cooked..... :pray:

2 brisket, 3-4 butts, 16-20 thighs, 3 slabs of ribs..... I take good care of the help.... :clap2: they love left overs.

The extra butt is not only back-up meat, it also provides the money muscle.

I have used the back-up brisky once. It saved a DQ.
 
I would probably not cook 2 briskets and try and just cook 1 higher end brisket. 2 choice briskets are going to run about the same as a prime or wagyu..almost. At least in these parts.

We cooked one Wagyu last year and got some calls but switched to two CABs this past year and did even better. :) We always find one is better than the other.
 
Just an FYI for you as to WHY we cook what meats we do...

Two butts...we cook one for the money muscle and one for pulled and chunks. The money muscle butt is pulled sooner for slicing. :cool:

Two briskets...we cook two briskets just to choose the best between them...not all meats are created equal. When I slice through the flat on each one I choose the one that "pops" the best...:thumb:

Six racks of ribs...we cook baby backs from Costco...they come three racks per cryo plus we can't see the bones or meat on all the ribs...that... and folks sign up on a waiting list for our ribs...go figure! :loco:

Twelve chicken thighs...we turn in six...if I can't get six out of twelve right I need to take up nitting! :becky:
