I'm a huge fan of burritos con lengua around here at the local taco vans.

I happened to keep a tongue from a holstein I slaughtered. I know that most people boil the h*ll out of it to get it tender. But I figured I'd smoke it, 6 hours later, it wasn't very good. Granted I don't think I put a lot of care into sauces and seasoning. Nor did I inject, etc. I fed a couple of buddies that were curious what it tasted like, but it was a waste of good charcoal.
 
I’ve been known to make pastrami out of it. Good stuff for sure.

Really?!!? Care to share? Never had it this way, but I can see how a pickling mix would definitely help break it all down vs. boiling, plus adding way more flavor.

Cool idea.
 
Another interesting post! I've had lengua tacos & I was surprised at how much I liked them. Thanks for putting that up!
 
Your tongue dish looks awesome bro. We like to boil with heavy spices for flavor. There's nothing better than eating some lengua tacos with a splash of salsa de arbol.. Hmm Hmmm great stuff.
 
Yes Id hit that for sure! Had it many times while cooking at the CC. Made Chef salads with tongue! Now I know what to send bobbyb for Christmas!:bow: Black Angus Beef tongue from the farm... No bad comments this is Q-talk.
 
What's a pound of toungue run? Meat is just so cheap - I guess you just really need to like it to go to the trouble to make it. I've had it in tacos - it's good, you can't tell it's not some other overcooked meat though. It didn't really have any special texture or taste. Maybe it was the salsa, cheese, sourcream, onions, etc that clouded my judgment.
 
Tongue is pretty cheap. I get some meats right from the farm. I got that tongue (free range beef) for $8, It was about three lbs. Tongue is cheaper in the grocery store.

When boiled a long time it does loose a lot of flavor. Tongue, though has an almost concentrated beef flavor. When prepared right it is delicious, I think.

I think it has a lot to do with how you grew up.

In my childhood things like tripe, liver, oxtails, heart, tendon, tongue. All manor of offal was common place on the table. And I have always sort of thought, if you are going to kill an animal, let nothing go to waste.

Ill eat the balls, Ill eat the eyes. Bone marrow, what ever, just has to taste good and I wont spit it out.

One of our BBQ event would not be complete without Morcillia AKA Blood Sausage.

Very popular here in the the FSU one of the appetizer staples on the meat tray.
 
Hey Brewer, just out of curiosity, have you ever tasted tongue, or any other "specialty" meat?

How bout octopus, ever tried that?

Grilled octopus is fantastic.

I have never tried to smoke it though, hmmmm?
 
I don't know what it is but the idea of chewing down on another animals tongue gives me chills. Almost like tempting fate or something? I realize it is "just a piece of meat" (had to get that crying game reference in there) but there's just something about it...
 
My parents served that dinner once. My brothers and sister were appaled. I thought it was pretty good-tounge ant octopus
 
Hey Capozzoli - you could have a specialty catering business for adventurous type folks - you have a clear marketing angle - obviously it wouldn't be for everybody but I'll bet there's some kind of market for that type of thing.

...I'm only saying this 'cause I want to see pron of some bride's mother screaming when dinner comes out at the reception...

But seriously, I'll bet there's some way to make some version of that work, like maybe as part of a larger catering package or something like that.
