You may remember my post on Tuesday about grabbing some $0.99 pork shoulder for a smoke this weekend. Well, they're trimmed, rubbed, and ready to put on the grill in a few hours.
It's 43 degrees right now and the winds from the nor'easter that bypassed us earlier this week are are gone. We'll see how my fire runs through midnight before deciding if I'm going to finish the thing overnight in the oven. Looking for a serve time of around 4:00 pm tomorrow. Expecting a bunch of sides as well as other proteins (smoked sausage, MOINK balls), so my sh!t is not devoured. The package weighed 14.5 lbs and ended up trimming 2-3 lbs of fat off 'em.
