In time for the Pacquiao-Cotto "firepower" slugfest, I decided to rev up my drum today. I bought a 2 pound pork rib and a pound of brisket point both slathered with Big Time BBQ Rub. I saw this 4 pound fresh "JACK" in the market early morning today, slathered it with my own version of a wet rub of minced lemongrass, kaffir lime leaves, minced ginger, paprika, onion powder, garlic powder and cayenne pepper.
I took a fancy with the famous beer can breast chicken and used 7-up filled with some spices. My own version of the chicken rub includes turmeric powder, ginger powder, cumin, cinnamon, nutmeg, cloves, minced lemongrass, kaffir lime leaves, paprika, salt, pepper, brown sugar and cayenne pepper. Smoked some vegetables for the chicken, penne and vegetable salad. I dumped everything in the drum
