Oh Pork Butts, why did you fall?
Was it my haste to get you started, did I take my eye off the ball?

Perhaps it was an aversion to a 10 hour cook,
You must have nudged that pan, it was on the way down when I turned to look.

Oh you do not know how I feel the pain,
I picked you up quickly, but you still left a stain.

Even though my heart was broke,
I dusted you off and put you on the smoke.

I'm sure you wanted to show me who was boss,
But I'll deal with you later, on a bun...with some sauce.

8.5 hours in smoke. One probing tender at 200 IT, the other still about 195 with some resistance. Pulled them both off, foiled. One in a cooler to rest. The other in the oven at 275 just to finish.



Can't wait to get back to them later!!
 
This is a great post! I love these stories.
Remember I think it was Landarc whose full plastic bags broke open and made a mess on the floor! One time I started cooking some mushrooms' bacon awesomeness
and it turned dark outside, couldn't see, and I walked directly into my hand dolly
with this beautiful mushroom goodness and
needless to say, it was gone. I went to bed I was so pissed.
(Tried to blame my wife, too. No Go.)
 
And now this story comes to an end, and it's finally a winner
Time heals all wounds and the smoke gave us dinner.

Tasted no dirt, ash or grime..just smoke tender pork,
On a bun or with sauce or just with a fork.

vac pak 4 oz portions is interesting...

Total weight was 13.6lb before cooking. Didn't weigh until after we ate but figure bout 7lbs cooked.

3lbs not vac sealed in the fridge for leftovers this week. 1lb in a single pack for a dinner later. 2lbs in 4 oz vacs to be frozen.

A few to my 73yr old mom who will use them for a dinner. The rest for my wife for taking to lunch at work. At least half of those will end up on a salad for her.
