Found some ribs and a sale on corned beef in the store yesterday :thumb: so today I fired up the half pint up with Stubbs and hickory chunks.

Ran no water in the pan and it stayed between 275-290 the whole cook.

Pastrami panned I poured a beer and foiled at this point but probably should've a little sooner as the bark was darker than I would've liked.
