I made some strips last weekend and was so happy with them that I wanted to repeat the process this weekend.
Making sure the grill surface is up to temp. I'm liking what I'm seeing.
Steaks go on.
Final sear before moving to the cool side.
They were perfectly medium rare and served with some blue cheese compound butter (that I saw someone on here make - thank for the idea!).
They were cooked a minute a side, two times each side (sear, flip and sear, flip turn and sear, flip and sear), then moved to the cool side, lid closed and they finished cooking for about five minutes.
