Default Crock pot butt

Well with the winds predicted tomorrow I am forced to cook a butt in the crock pot overnight I guess. Any suggestions? Should I inject? Should I keep an eye on temps? Or should I just cook on low til she pulls apart nicely?

At that temp.. you probally could put the UDS in your garage and crack a window, and not have to worry about a fire...

Me too. The thought of a butt in a slow cooker, well, I'm picturing meat floating in grease. Not good eats IMO. Save the butt for another day even if it means freezing.

Cube it, pan sear in hot cast iron to brown and then make green chile stew or regular stew or chili in a big ol pot or crock pot and thumb your nose at the weather. Or freeze it for another day. You are going to get a lot of rendered fat if cooked whole in the slow cooker.

If I had to do a pork butt in those circumstances, I'd probably do it in the oven...

It's actually a piece of cake to run a UDS or similar in this weather with a simple reflectix sleeve i made for all of the smokers, wind and cold doesnt penetrate it...i've been doing it including the minus 50 wind chill. Do you have a Lowes or Menards near by?

Put it on the Broiler pan ( all the drippings drop into the pan) in the oven and roast that Piggy at what ever temp you cook at. I would add a few drops of Liquid smoke to an simple injection of chicken stock for the smoky element of the equation.

Crock pots are great for certain things (I have 2 of them) but pulled pork is not one of them.
As others have said, save the butt for better weather or cook it in the oven.

Put your hands up, an step away from the crock pot. Seriously, the oven will work much better. Roasting rack inside of a turkey roaster.

I must say that I'm disappointed that the vast majority are hesitant to cook in those conditions. You only have to be outside to fire up the smoker, place the meat on, take the meat off and maybe a couple times to make adjustments. Gloves or mittens, hat/face mask, warm boots and it's all good!
