Trurkey Drums, Brined in water, brown sugar, kosher salt, allspice, old bay, orange juice, lemon juice. Rubbed with Plowboys Yardbird.

Looks awesome! How did the skin come out? is there a way to ensure it's pretty dry? I'd rather have tough papery skin than flabby skin

I made sure the skin was dry before i put on, came out nice and crispy, just like at those Ren Fest!
