Exclamation 2012 Barbecue Brethren Film Festival Pitmaster T's - Hit Me Fred BBQ Sauce 2.0 (Bulk Series)

Well its Sunday, and though its late, here it is.

I got REAL filthy cleaning out the pit. Real gross... so I got home and rested then put the thing together.

I go a bit more into the "Steep" here.

Love the new video. I like that you left the intro from the old video for this sauce. This is a good mustard sauce. I go back and forth from this recipe and another based on what I'm in the mood for.

...although...I've never made it with Purgatory Stout. Guess I have to make some more

Yeah, like I have been saying, at the church at least, and probably if I got back into the biz, for ease, I will probably make it out of the stout from now on.

I am thinking of tweaking the stout too. You will laugh, Chris. For some damn reason I slipped back a few years and Prince became Rick James. You might remember Prince was Rick when I frist started, but when I made Popdaddy's soul bread the Purple Onions made it logical to reverse.

In The Beale Street Red and wett 2.0 (due out this week) my recipe called for Prince and I forgot and made it Rick... so I even get confused. It really didn't change the taste much. I am considering a combo part of rick and Prince, or just dumping a big ole thing of Glitter in the batch.

I am finding that the Stout has all the layers of flavor for everything. FULL STrentgh it is a delightful hot sauce for those of us not impressed by sheer heat. So you can see the cross utilization principles here. I am not seeing a degradation in flavor in Hit Me Fred using it compared to raw spices and assembly. Sure is quicker and also, if you wanted to keep things secret, you could either make the stout in private, or have employees make all the liquid combos and make a batch of the steep spice pack and pour it in. Thats what a lot of places do.

Final Film in the Brethren Film Festival is nigh. I enjoyed it, in the months to come as people digest this, I hope y'all do as well. I will not be releasing Foxy Brown's Double Bs until my Birthday, August 24.
