Brisket and burnt ends.

Well, I decided to fire up the WSM this weekend and tossed on a brisket... Splashed with some Tabasco Spicey Worcestershire sauce then added coarse salt and fresh cracked pepper... Cooked with charcoal and pecan.

I thought it turned out pretty good.

I love burnt ends so I separated the point, cubed it up and put it in a pan. Tossed in some TXBBQRub brisket blend. Added some Texas GunPowder (powdered jalapeno) plus some red pepper flakes and then coated in bit of SuckleBusters BBQ Sauce. Put the ends back on the WSM for a few more hours in the pecan smoke.

Here's the results.

Spicey, smokey and just the right amount of chew!

Good job - looks nice and juicy! What is the sucklebusters sauce like?

Looks like a good job. You gonna be in town June 5-6 for the Colleville comp?

That weekend, I'm cooking at a party for a soldier being shipped off to Aphganistan.

Good luck then. Good cause. Stop by Friday sometime and had a beer if you can.
