Had some friends come over yesterday to enjoy the pool, play some volleyball, drink a few adult beverages and eat some smokie goodness. Made a brisket that i smoked with a mix of Blue K , mesquite and hickory chunks for 16 hours, wrapped it in foil and put in a cooler with towels and newspaper for another 6 hours...came out awesome, my best yet! Inspired by got14u's smoked mac and cheese post, I made my own rendition which turned out great, my version had a can of cheddar cheese soup, shredded mexican mixed cheese and bread crumbs on top and finally some chicken thighs. Everybody loved it, thanks to all who have inspired me one way or another here :-D....below the tools, the results.

Looks great. Do you normally rest your briskets that long, or were you waiting for other things to finish?
 
The long rest was due to being sidetracked by other things going on...Rangers/ Royals on TV, getting organized, cleaning the pool...luckily, it worked out. Usually I would let it rest 2 to 3 hours.
