My butcher's new apprentice made a mistake this morning and cut me 6 boneless chuck roasts at 3lbs each instead of 3 roasts at 6lbs each. :mmph:

He was kind enough to offer them at half price so I took them. I want to do these low and slow on the BGE to pull. My question is whether I should tie them in pairs or just smoke them individually. Any thoughts? If it helps to inform the decision I want to cook them at the same time as 2 pork butts at 7lb each.

Why not try it both ways, then you'll know what you liked better in the future.

I would think that either way will work but the smaller ones might go a little faster.

Trying it both ways would be a great way to learn. I'm just worried about the smaller ones drying out. These will be for a family reunion so I want to get them right.
