A big thank you to everyone for all the great turkey posts! I did my first turkey on Thanksgiving in my UDS and it turned out quite well! PatioDaddio's brine recipe and tips were great...never did much brining before. The many threads with tips like icing the breast and running higher temperatures worked like a charm. I got started in all this last spring and I'm hooked for life...absolutely love it here! I have done chicken quarters, Boston Butt, ribs and now a bird...life's good.
