I like a good sauce with filets. My favorite is a mushroom peppercorn sauce.

salt, black pepper .... cook till done

then add some crushed dried oregano

and squeeze half a lemon over the top

does not sound nice, but trust me, it is
 
Put Santa Maria seasoning on them: equal portions of salt, black pepper and garlic powder. Coat well and grill :) I really like the flavor of this rub for tri-tip and steaks.
 
If you aren't going for the carpaccio, then season with salt, pepper and crushed bay leaf and rest.
Take steel tongs and wave the steak over a candle.
Eat.
 
I know this is after the fact but if you want kick your steaks up a bit, try out a Chimichurri sauce.

I dont want to link one that doesnt support the site but you can google it and there are a ton of great recipes. Great for people who have a savory, tangy pallete.
