More experimenting (pron inside)

I did another experiment with chicken drumsticks. I cut the drummies from leg quarters this time and cut extra skin to wrap around the top. I like the way they look much better but I didn't let them brine long enough and I didn't have enough flavor inside. *sigh* Still have work to do.

I also did an experimental rack of ribs today. I really liked the way they came out. Flavor all the way thru. Great Texture and they were pretty. What do you think?

Yes I know they weren't my best cuts but I was working at the market at the time and customers kept interrupting.

How do you like that bite mark?
 
Chicken and ribs look really good. What was the experiment with the ribs??

I'd give them 9's on appearance and tenderness. :wink: I wish I could taste them.
 
We all need to go down there and taste test, these experiments need testers.
 
Great looking results! The drummies are looking perfect, at least to me. The sauce on the ribs looks a tad uneven - otherwise great. The bite mark looks just like what I'd want from a rib.
 
The color on those legs is wonderful! And the bite mark tells the tale too. :)
 

I thought the ribs looked good in the other photos except this one. Maybe it is the lighting but the way they are sauced doesn't look appealing and a couple of those ribs look like they have no bark.
