Hi All, I have an Old Country Wrangler and currently insulate the firebox with firebrick but I am wanting to increase the insulation (for temp stability reasons) with cartable refractory cement.

Have any of you tried using cement or what other ways have you insulated your firebox?

I assume you mean "castable" refractory cement.

I don't have a need for insulating my firebox, so I haven't tried.

I see you are in Virginia, are you worried about external temps causing temp swings? Or is it thin metal on the wrangler? I'm not familiar with it.

Mix heavily with vermiculite for insulation! Or perlite. Or google Perlite Insulating Concrete Pool Base for In-ground Vinyl Pools to find it premixed

The problem you will encounter when trying to adhere cement to steel is the different expansion rates when heated. The steel will want to expand but the cement will not, most likely leaving you with cracks. You could try to put a ceramic blanket under the fire brick you have now.
