This is what I'm injecting the big bird with this year;
Turkey injection sauce
1 cup melted butter
1 cup honey or real maple syrup
1-1/2 cup white wine
3 sprigs rosemary coarsely chopped
4 sprigs thyme coarsely chopped
½ teaspoon rubbed sage
Melt down butter and sauté herbs on low heat for a minute or so. Add honey and wine, simmer for five minutes. Let cool, strain and inject turkey at least 12 hours before cooking
I'll most likely change the quantity's as I prepare the sauce to suit my tastes.
