o.k. I took 2 gal. of water in a big pot and took couple of cups out of it and heated it and dissolved all my salts and sugars, spices etc... then washed turky sat it in the pot let the hot mix cool down then poured it in with the bird. Kept the water in frig to keep it cold didn't have any ice. Just wanted to ask if anyone thought this was o.k. and the brine would still be good. just doing a 10 lb bird and going to let it brine about a day and half.

There's nothing wrong with brining in the fridge instead of using ice, as long as the water stays below 40 degrees, it doesn't matter how you keep it cool. I've done it that way many times with smaller birds, chicken parts, etc.

Yeah I can check temp but I am sure it is below 40 in the frig. This is my first time brining so I hope it turns out good.

You'll be fine. Did you have enough ingredients for 2 gallons or 1 gallon? Many people forget to double the ingredients and thus dilute their brine.

I do mine in the fridge all the time, no ice.
