Matt would have been 19 on saturday and his mom didn't want the day to go by unnoticed. So we had some family over and put the word out to his friends. A couple got back to us and said there would be about 40 of them there (plus 20 or so family, way more then we expected). I knew I was in a Catch 22. If I cooked for 60 it would be way too much, but if I didn't we would run out of food. So I opted for the 60. Even though only 40 showed up, they vowed to eat and much food as they could, 19 year olds can pack away the food!! Anyone who showed up and said they weren't eating was escorted to the kitchen where the changed their mind as soon as they hit the smell.

The menu:
Ribs
Brisket
Pulled pork (added because of the estimated numbers plus I had 2 butts in the freezer)
ABT's
Keri's Hog apple beans
Potato salad
whatever anyone else brings

From 5 oclock friday till noon saturday I was non-stop cooking. Knowing the amount of food and the cooking space I had, timing was critical. I hit the timing balls on with everything plated at 11:54.

Thats great what you did in his memory, and looks like you busted your hump producing all the awesome looking food.

That is a great spread. Good planning and coordination. I agree, Matt would have been proud.

What a wonderful thing to do. You have my utmost admiration for how you have handled this time in your life. I can only hope to be as strong as you are if something like this ever happens to my family.

I was thinking about what a disaster this could have been if I had tried a cook like this a couple years ago before I started hangin here. I've learned a lot here from technique, to timing, to recipes, to cookers and mods. Even though you guys weren't there you all helped. ----Thanks
 
Good eats there. Good job on the timing. I always tell my guest a range usually 2 to 5 so we end up eating around 6.... good job.
