Thanks to the brothers that offered their advice.
The turkey turned out fantastic.:clap::clap:
Here is the bird in question...
About 7.5 lbs... not very big, but fine for a first try.
As advised, I chilled the breasts in ice while I made the stuffing and butter / spice injection.
Here's the stuffing mix
To which I added fresh bread crumbs...
And here is the butter injection
Here's is the Turkey stuffed and injected and buttered. You will notice a toothpick in the right leg. That was a little surgery to bring a very large tear in the skin together.
Then onto the WSM at 300F on the the bottom deck.
Then the chickens went on top... no sense in wasting a full deck!:thumb:
Naturally, the chickens were ready way before the Turkey, so we had the chickens for dinner. They were fantastic.. but here's the Turkey, done at 160F IT
So, this Turkey will be served chilled on Xmas day for our party of 40 people. Being summer here in Upside Down Land, it will be a great compliment to the rest of the cooked / BBQ's Roasted meats.
The smell of the Turkey, smoked in the applewood is awesome. Can't wait to chow into this tomorrow!
