My first time. Decided hot and fast was best because it was a late decision to do it then thaw etc. Just threw it on. Updates to come.

That's a real nice looking hunk of beef. The largest chuck I've done was in the 3.5 lb range, gotta try to get a big one like that.

Hard to tell by the pic, but that one looks to be in the 5 lb range?

Keep the updates coming. What kind of cooker is that? Whats the exhaust for?
 
Have never done a chuckie hot and fast (on purpose at least) Interested in how that works out for you.

My chargriller offset that I modified for reverse-flow. Didn't use that option for this.
