Had to work today so I did a short smoke this evening. Stuffed Bell Pepper's on the Weber with a little corn on the side.

They look very Nice, you stuff with uncooked meat ?
I have only used cooked meat for no reason,
 
I never thought of putting bacon on top. I'll have to do that the next time I make stuffed peppers.

We put the bacon on top so the top mix doesn't dry out. Also just because it's bacon it's a plus
 
STUFFED BELL PEPPER
1: Cut the top off and core 4 large red bell peppers (yellow or green are ok too)
Place in a pot of boiling water for 3 minutes. Then remove and set aside
2: dice half a medium onion and a small jalapeno pepper
Saute In olive oil till onion is almost clear then add 1 clove garlic and cook till clear
3: boil one cup of rice till soft (we use brown minute rice)
4: combine all below, mix well and stuff bell peppers
1 pound hamburger ( about 85% lean)
Previously cooked onion, pepper, garlic, and rice
1/2 cup diced tomato (canned is ok)
1 tsp oregano
1 tsp black pepper
1 tsp worsteshire
1 tsp hot sauce (we use Melindas habanero sauce)
1 ½ tsp soy sauce
1 tsp table salt

5: Slice 4 strips of bacon in half and top each pepper with 2 pieces.
6: Place shallow pan in smoker and add ½”- ¾” hot water peppers just boiled in. Place the peppers sitting up in the pan. Smoke indirect at approx. 300f till IT temp is 165f (approximately 1 ½- 2 hours)

Heck of a nice job. I always think about smoking stuffed peppers.
 
Offset cook? Full chimney of coals? How long? Did I mention it looks freakin' awesome?
