last weekend i did a small 5lb butt so instead of filling up my large charcoal ring, i took an ECB water or charcoal pan and drilled about 15-20 holes in it, about 10 on the bottom and then 10 around it.
It really worked good. I wonder if having less air access kept the coals burning longer. my large ring is all expanded. I think on this pan i could get 8-10 hours easy. Definately will use when I only do ribs.
