1st brisket in the summit

I picked up a prime brisket from Sam's last Friday and am just getting around to cooking it. It is my 1st brisket on my new summit. It is a prime packer from Sam's. It has the thickest flat that I have ever had on a brisket. I like to buy around 12 lbs briskets, so this one was perfect. It had a good size gash in one side of the flat, but oh well. I trimmed pretty aggressive and rubbed it down with the La Barbecue rub recipe I got from this site. I plan on wrapping with butcher paper in 4 hours.

Thanks for the photos? How did you light the coals, I am curious if you used the igniter or another method. Also, I have been debating whether or not to buy a summit. What do you think of it?

Did you rub it with the pickle juice/mustard slather too? And nice splits. I know my wood chopping skills are not that precise :p
 
I used the ignitor under a charcoal chimney. Worked well. Not as fast as my fish fryer, but more convenient. I let it burn while I trimmed, then took the chimney out and filled the smoker with charcoal and wood, then added the coals. I have no complaints so far on the summit

No pickle juice or mustard. I hate both of them. Couldn't put them on my brisket

Looks like the cook is going as planned. Hoping for a fantastic finish.
 
Brisket is finally done. Took a couple of hours longer than I anticipated but I guess that is BBQ. It is resting now and I will slice in an hour or so

It was good, but not great. I am beginning to think that I am a foil guy and not paper. My briskets seem to be juicier with foil. Anyway, not a bad 1st smoke on the summit

Here is what is left over of the charcoal. I didn't fill it all the way full, but it had quite a bit to start with. This was also the 1st smoke I did with the Weber charcoal briquettes
