This past Sunday I decided to try a spatchcock chicken. I also brined the chicken for the first time as well. I did a search on here for brine and found a link to a SmokinOkie's Brining 101 and did his Simple Brine #1. I have to say that putting a bird is brine is mighty good. I think I over cooked the bird a slightly (crispy wings) but is was still very juicy and tasted great.
