"Crazy Thick" Pig Candy!

Here is some pig candy that I made this past weekend using Burger's
Smokehouse "crazy thick" (1/4") dry-cured bacon.

How can you go wrong with peppered bacon coated with dark brown
sugar, baked, then glazed with pure maple syrup and a little cayenne?

Here you go...

Ingredients
1 lb Thick cut peppered bacon
1/2 cup Dark brown sugar (use more as needed -- I only had eight slices)
1/4 cup Pure maple syrup
1/4 tsp Cayenne

Method
Preheat your oven to 375*.

Mix the syrup and cayenne well in a small bowl and set aside.

Coat both sides of each bacon slice generously with brown sugar.

Arrange the bacon on a wire rack inside a sheet pan as shown.

Bake in the center position until the sugar is starting to caramelize and the bacon just starts to crisp around the edges.

Brush each slice with the syrup and bake another five minutes.

Flip the bacon over and brush the other side with the syrup.

Bake until the bacon reaches your desired doneness.

Remove from the oven and let sit five minutes.

Enjoy!

It looks great! I tend to prefer thinner bacon for pig candy, but maybe if I cooked it a bit slower, I might like it thicker. I like a crunchy piece of bacon! :)

Good lookin' pig candy there John!!! I went to the DR. last week. Told him I've really been enjoying the homebrew & BBQ lately. He said I'd better watch it. Then the nurse handed him my blood work. Cholesterol was 143, everything else was within range too. So I said, "So Doc, What do you think I should do?" :heh: End of conversation. I guess I'm lucky that way?? Cheers!!!
