Waygu Tri Tip

Decided I wanted Tri Tip today after seeing Kevinj’s post so off I went. Hopped on the motorcycle and 180 miles later I have a good looking Wagyu Tri tip, duroc St. Louis spares and some jalapeño cheese sausage. Just put the Tri tip and and plan on pulling it at about 125 for a sear on the vortex finishing off with a 15 minute rest. Already have some cowboy butter made up so it’s gonna be a good dinner I hope. Just cracked my first beer now I am just gonna relax and wait.

Tri Tip looks great I'll have to splurge one day, the Jalapeño Cheese is a little milder than the Jalapeño Pepper sausage both are good but the later is my favorite sausage, hope you enjoy it. Can't wait to see the ST Louis Rib cook, they're so good, I don't buy anything else anymore, Full Spares at NAS are a $1.99 a pound I'd rather spend the $3.99.

It’s funny, a buddy of mine rode on his Harley over with me and we decided to stop by the Harley shop on the way back home. He ended up trading his 2015 Road King in on a 2019 Road Glide Ultra. So my $50 meat wasn’t nothing compared to his purchase.

Yeah the Sausage is Kelly's Jalapeño Pepper Sausage and it's not mild imo, nothing wrong with what you picked up.
 
Just finished eating and I only grabbed one pic as I made the first slice. It turned out delicious but I screwed up and didn’t cut the wide end perpendicular to the grain. I was in too much of a rush and wasn’t thinking. It was still really tender even with my mess up. It probably helps that I cut it in 1/4” strips. The sausage was good but I want to try the other next time. Everyone enjoyed it and wouldn’t have even known if I hadn’t pointed out my mistake.

Don't care how you slice it or dice it looks good to me, I'm sure it was awesome. :hungry:
 
Looks great to me, no probs with a touch of chew.
 
Very nice. I'm hoping my area starts getting some wagyu anything in stock. Having seen this and then mention of Costco Wagyu briskets has me hopeful!

I am bringing a cooler the next time I am down that way and filling it with those prized meats!
 
Great looking tri tip - whenever someone complains I cut it with the grain I tell them they’re chewing it the wrong direction :icon_smile_tongue:
 
Now that’s a meat trifecta of the highest order. Not sure I gets any better. Funny thing is. No Mayer what I paid it with in almost every case the sausage is the cheapest meat but often my fav.

This cook is FULL of win! I wish I could get Wagyu kinda reasonably priced around here. Yours looks amazing!
