I stuffed mine (above) with a mixture of Asiago Cheese, cream cheese, finely diced onion, and a Lil Smokey cocktail sausage.

Here's a basic one with no extra stuffing.......
Like others have said: shrimp, lil' smokie, a small pull of pulled pork, strip of ham, I like a narrow chunk of chicken breast rolled in rub........

Full Fledged Farker
Here's some shown in stages of assembly. Prepped them last night for a cook later today.
Stem end cut off the jalepenos, then halved, de-seeded and de-spined. Room softened cream cheese from a ziploc pastry bag with one corner cut off.
A touch of rib rub and Lil' Smokey sausage. These happen to be turkey.
Ready for the flames!
