I picked up some beef short ribs the other day and I'd like to smoke them up today. How long should they take to cook at 250? Also, would a simple salt and pepper rub go good on these?
I like to use onion powder and pepper. Salt restricted diet or I'd use some salt too. Sometimes I add some Ralph's Brisket Rub, also. I've never checked the temp, but cook em util they bend real good when picked up by one end.... almost to the point of splitting. I think about the same as BBQ Bubba.
