Seeing all the pastrami threads caused me to thaw one last night :thumb:.

Went on the Mammoth at 9am and wrapped about 1 with some boiling water raised up on foil. Should be done by 4 or 5 then I'll rest till dinner.

Looking good! Plan on making pastrami’s cousin from the great white north soon.
 
I have about 9# of brisket flat in the cure now. Started 4-5 days ago. It'll be ready for smoke by the weekend (I hope). First time to cure my own.

I hope mine turns out as good as yours.

What's the rub you have on there?
 
I realized that there were a few pastrami threads going around myself, and each one makes me want some more and more. It will happen! BTW, that looks freaking awesome, Jason.
