How long can it hang out in the fridge before it needs to be eaten or frozen?
 
three days - four at the most...
 
I have eaten it a week out while I'm doing another. If it is well smoked that should give you an extra day or two.
 
I won't go more than 2...on day 3, it gets frozen. It is so easy to thaw as needed if you freeze it in small portions in ziplocks that I figure why risk gut cramps...
 
Assuming your fridge is at about 35 degrees F.
I would say about 5 days.

But; you can make pizza and use the PP.

Or for breakfast....fry up some potatoes; when they are about done,
throw in a nice portion or your PP, and mix it in.
While that is getting hot...cook a couple of eggs (your favorite way)

put the potato & PP mix in a large soup bowl; grate some Cheddar
Cheese on top of that...your eggs should be done now..so place
them on top of the potato/PP/cheese mix,

Sit down and enjoy a Fantastic Breakfast.

For lunch...mix some PP with BBQ sauce...when it's hot...
layer it on a sliced french roll...top with Swiss (or your favorite cheese)
add onions, peppers, tomato, pickles, sauerkraut, or whatever you have.

Sit down and enjoy!

For dinner..toast a couple slices of bread...place them on your plate
while you are heating up the PP. Place the PP on the toast....top with
some brown gravy (or BBQ sauce..if no gravy) some mashed potatoes.
A small salad or some tomato slices, and cottage cheese goes great
with it....don't forget to grate some fresh Romano cheese on top ot
the PP and gravy.

That should just about take care of the PP (pulled pork)

I just had 1 week old pork for lunch today and it was great. It was not smoked though, I cooked it in the crockpot. Not sure if it would make a difference for how long the pork is good for.
 
At our house we have yet to have opportunity to test these limits:-D
 
Pork not around long enough!!!

That's what I was going to say!!!:!:
 
3-4 days is our guideline. We rarely have any left over. If we do, we vacuum seal & freeze it. It usually goes in brunswick stew or a pot of pinto beans. Best beans & cornbread you ever had.
