De boning a butt

Anyone have a thread on it. I need to get one done.

I have done many venison hind quarters, I would think I could do it the same way.
 
I would think if you injected well around the bone there wouldn't be any issues.

I've done it a few times.. always a pain. I think I watched that video as well before I did it. I want to get one of those hook things to hold onto meat, to keep hand away in case I slip with the boning knife.
 
It's not that bad, really. Seriously. I prefer NOT to, but it is not that bad.

Just do it and be patient.

Seriously, that's it.

Don't try and take any shortcuts by chopping through big chunks of meat.:cop:

Just slide the knife in there, then guide it around, and the start pulling meat away from the bone and slicing the meat still connected to the bone.

Before you know it, you will have the bone in your hands with minimally thin layer of meat attached.

Lack of patience is your enemy.

Good info here Adam. Use a sharp boning knife and go slow, following the bone.
Cut out any veins, glands or other nasties you find on the meat too.
