My neighbor came over this morning and asked would I help him cook some ribs for a party at hs workplace. No problem I said. Nearly 60 racks of Danish ribs later I am tired. Those little farkers are a pain to cook. Had to pull them after about an hour and fifteen or less or they would over done. But any way they were popular. The guest of honor at the party is a five star resort chef who asked for my ribs. He had them at our Halloween party the last two years and loved them.

I find the Danish ribs have a bit of gamey flavor. didn't care them too much - other folks didn't know the difference.
