I have a bunch of these in the freezer so decided to give em a go.They were OK.

Looks like good food. What was just ok? Or does okay really mean great?

Just O.K. Not sure what I was expecting.Like I say,first time to try them.I would much rather gnaw the bone of a rare,bone in rib roast! Live and learn.
 
They look really good, but yeah, hitting those pretty hard with smoke is a good thing. You're happy with the tenderness, and that seems to be what gives most people trouble, so you should have 'em just about perfect on yer next cook. :clap2:
 
Looks good, Hoss. I felt the same way when I made beef ribs the first time. If you don't mind me asking, where in the area did you find beef ribs with so much meat on them? Also, a couple of weeks ago you did some bacon. Where did you get the pork bellies?

I got the bellies off of 2 pigs I bought over in Walnut,MS.The beef ribs came off of 2,1100 lb Jersey steers we raised on our farm and had slaughtered down in Corinth earlier this year.Home grown hogs/pigs are hard to come by around here anymore.
 
Thanks! The store bought beef ribs I've bought have no meat on them. I've been wanting to try to make bacon, so I've been searching for the bellies.
 
Those ribs Look Great to Me !! Beef ribs around here dont have much meat on them at all...Yours Look Great !! Good Job Hoss !!
 
Hoss, they look great, keep experimenting and you will get the flavor!

I view it like the point in brisket. It can be incredible, but, it needs good spicing and smoke.

Agreed. In fact, I usually cook then with brisket seasoned the same, just cooked a little shorter. My boys love them and call them "brisket on a stick".
