Trish and I decided to try Scotch Eggs on the smoker. I LOVE them at pubs and had to give them a shot.

Used bulk breakfast sausage, crumbled bacon, shredded cheddar, a dollop of the awesome Chipotle paste I found here and some fresh hard-cooked eggs.

Smoked them on the Weber 22" after I cooked dinner on the leftover coals.

My wife would LOVE me after I had some of them dudes,,, I can smell it now maybe something like Cracker-Barrel in the mornings. I need to try them. :biggrin:

Good lookin' eats right there! You have made the eggs move wwaaayyyy up on my to - do list :-D.
 
How long did you smoke them? I have made them a few times but in the oven and that been a while ago yours looks great.
 
They look interesting. Although a lot of people love them, I just can't bring myself to adding Scotch Eggs to my list of "things I've got to make."

I do love the presentation.
