Trish and I decided to try Scotch Eggs on the smoker. I LOVE them at pubs and had to give them a shot.
Used bulk breakfast sausage, crumbled bacon, shredded cheddar, a dollop of the awesome Chipotle paste I found here and some fresh hard-cooked eggs.
Smoked them on the Weber 22" after I cooked dinner on the leftover coals.
