Smoking on a Fine Carolina Autumn Day

Tuesday was a wonderful day for Smoking meat out by the barn.

Coming up to temp as the Sun Rises...I enjoy the early morning sounds of the country and sitting here, waiting on the Sweet Blue, is a complete joy...

On the menu today.....Meat.
Couple of nekkid Fatties, chub of Bolo and a Pork Loin rubbed in my HomeMade Longbeard Rub. And......some Beef Sausages.....

The Top Rack.............Pig Candy........I used a combo of Brown Sugar mixed with Simply Marvelous Cherry and a heavy Tablespoon of ground cayenne pepper.....back to that in a minute....

Into the smoke!!!! I'm using pecan shells mixed in with the KF and a couple small chunks of cherry and oak. It smells delightful!!!!

Now about that Pig Candy.....Hot!!
I had to eat three pieces just to be sure.....:thumb:

I haven't cut into the Bolo yet...maybe around lunch today....

However, I did have some of that Outstanding Beef Sausage.....

We got blessed with another fine Carolina autumn day, didn’t we? I started mine earlier this morning but on a smaller scale than you. Yours looks great!
 
Great looking food :thumb: I had to look up Ossipee-Osceola to see where you were. You're not too far from me. It was a beautiful day to cook.
