Yes, My Dutch ovens are Le Creuset. The Le Creuset outlet in Allen has some good deals on factory seconds, if you keep and eye out. I got all of mine at 50-percent off or less.

BTW, a roux is not difficult to make, although people think it is. It is actually very easy, once you know how. I'll gladly walk you through it sometime. We live close -- we should get together and cook sometime.

Looks awesome , I did basically the same thing with my left over smoked turkey from Thanksgiving , with one difference. Growing up down here in New Orleans the turkey always gets turned into gumbo , but we throw the whole thing , bones leftover meat and all into a stock pot an simmer it until it's falling apart. Strain it and pick the bones out and you've got turkey meat AND a batch of excellent home made turkey stock from all those bones cooking down.
