So I built a reverse flow BBQ. My reversal plate is removable, and my fire pit has a 10" or so offset. Wondering if I should remove my plate put the pizza closest to the fire, and crank the temp up. Suggestions??????????

as long as you can get it hot enough.... and may want to consider a baking stone or something similar to separate the dough and grate.

if all the heat is flowing directly underneath be on the lookout for bottom cooking faster than top... especially if your the type that likes to load on lots of sauce, cheese and other toppings... needs to be balanced.

Bake it on top of the FB on a few firebricks and use a sheet of foil to reflect the heat to the top of the Za

Crank it to 400-450 and chunk it in the pit on top of the 18x18 ceramic tile
