2 hours @325*.....time to flip......

Meantime.....sauteed onions in a Dutch Oven and then added some aromatics.....

2 hours later roast is @190*......into the Dutch Oven it goes
with some beef broth, the sauteed onions, mushrooms and quartered
baby red taters.....

Geez that was a heartwarming set of pics.
The countryside and lifestyle is spookily a parallel universe to the remote Southwest West Australia where my family are from. Sooo similar, and so nostalgic to see.

Very nice Nate. Just discovered my ggg granddad and family lived in NC May still have extended family there. No wonder I like the pic.s so much! Know any crazy Scot-Irish McLains out there?
