Picked up 13lb choice packer from Walmart yesterday. Got it home and trimmed and seasoned so it could nap in the fridge overnight. Put it on about 10:30 this morning with B&B briqs with pecan and apple chunks.

Let it ride for 4 hrs didn't fight the temps, just let it land where it wanted too. It has sit like a rock.

After 4 hrs I wrapped in BP and for the folks who need temp references it ranged from 172 in the flat and 186 in the point.

Taking the brisket off now and gonna let it rest in the oven. Report back later.
 
It just keeps getting better. Chopped up some Savoy cabbage and onion and got that on the drum as well.
