Back in the before times in January, Costco had a sale on bone in ribeye roast.

Took one home, sliced into rib eye steaks and vacuum sealed.

This is the last one and around 2.3 lbs, so I thought to apply rub, "Smoke Vide" in the MAK Two Star smoke box and eventually finish over charcoal.

Rendering brisket trimmings for scooby snacks

It'll be a great base for the seasoning on the carbon steel skillet

Roast is coming along nicely

Nicely done :thumb: I’ve yet to use the smoke box on my Mak 2* - I should fix that soon. Nice outside the box cook (or I guess, inside the box?) :clap2:
 
And I was just thinking that I was tired of beef and needed more poultry cooks in my repertoire...

Awesome looking feast!
 
There's just something really special about a nice ribeye and your is definitely special!
