what method do you use when making brats.. Do you smoke them only.. smoke and grill, grill only, use foil???

Simmer and grill

I usually simmer and grill them. Though I have lately been doing the boil in beer and onions and then grill.

Others on this forum Bandera them and then boil/simmer or simmer/boil and then Bandera.

It just depends on what flavor you're after.

Here ya go.... Brats 3 ways.

easiest to hardest.

1 - Boil in a pot with butter, beer and onions, and whatever else ya
want for spices.. horseradish, hot sauce, pick-a-peppa is reall good
with brats... Boil for about 20-30 mins, then grill them to brown,
but dont let the skin split. Some memebers brown them first on a
grill, then boil them. Either way works.

B - my favorite. get either a waterpan liner from Brinkman, or line
the Bandera water pan with heavy duty foil. No holes, dont let it
leak. Fill the water pan with a stick of butter, 2 vidalia onions
(you can sautee them for a few minutes first to get them started and
soft), some good beer, a little hot sauce, and anything else on the
fridge door. Put the brats in the water and put that in the bandera,
preferably while you have a few other things cooking, ribs, butts,
whatever. Let them simmer for an hour or so, unless the pans starts
boiling, but normally that water pan never makes it to a rolling
boil, so this is low & slow on the simmer part. It can go for an
hour, maybe 2. I load it up with lots of brats. Then take a few out
and put them on the bottom rack for a few minutes when I want them.
Smoke them for mabe 5-10 mins, i dont like to let them wrinkle.
Grab some onions from the water pan.... Damn, now Im hungry... Keep
replenishing the supply as the ribs cook. Now, if your really
daring, That broth on the bottom... that beer and onions... its a
great smoky onion soup... if ya got the guts. But its awesome.


III- Sabret makes those seasoned onions that ya get at the hotdog
vendors. Theyre onions in a red tomato like sauce. Costco and sams
sells them in big jars. Hot Dog onions. ..
Fill a pot with the brats add a beer or 2 and cover the rest of the
way with those onions. Its like mud, thin them out with beer. Simer
the brats in that for 20-30 mins, then into the bandera for 20
minutes at 250-300.


Your choice... these are tried and true.

I snipped this from old post by Colt on the Yahoos site. It's pretty close to Phil's post yesterday. I tried this a couple weeks ago and it was KYDITDG...

I make the best brats ever (ego really going here)... add more stuff to your beer/onion stew... garlic... hotsauce... worshteshire (sp is wrong I know...).... Jalapenos... Tequila... basically anything and everything in the fridge... the longer you simmer them in the beer stew the better they are... then strain all the goodies out of the stew and put that on your brats with some saurcraut, and brown mustard... yum... (looks in his fridge for brats...) if you are really daring you can put the brats back in the warm beer stew as well to keep them "fresh", you also want to make sure of 2 things... first that you poke holes in them before you simmer them... and to not let them boil hard... if you boil them too hard they will not just spilt, sometimes they just disentegrate.... or break into small pieces...


I've been known to simmer them a day ahead then put them in the fridge (in the pot and everything) overnight... and simmerthem again the next day before I brown them on the weber/gas grill...

I first simmer them in beer and onions on the stove for 2 - 3 hours on low. Then throw them on the grill for a couple minutes on each side. Then back into pan of fresh beer and onions and into the smoker for a couple hours. Then as people want them, pull them out, slap 'em on the grill for a minute or two on each site to sizzle them up and onto a bun!
