• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

You guys are slipping...

No one has started a weekend cooking thread yet... :eek:

Because of travel, weather and the Libertyville, IL comp, I haven't fired up the Good One in about 5 weeks! I am going through withdrawal! I need to play with fire and meat! :shock:

So... I'm going to build a fire in a little while. I went shopping yesterday. I might have over-shopped :-D.

I'm going to cook a couple of fatties, a 12 lb. packer cut brisket, three Boston Butts, about 6 lbs of jerky, a big pot of beans and some hash brown taters. I'm also going to make a batch of cole slaw.

The way I have it figured, it doesn't cost me any more to fire up the cooker and fill it than it does to just cook on brisket.

Most of the food will go in the freezer for mid-winter meals, but we're eating the brisket and beans tonight.

You're Right Ron ! ..... but

.... I did a great whole butt yesterday 'cause we're having our first local (small town) EggFest today with local owners coming in all day to cook. I'm doing a large loaf of Country French Bread to start so we can have something to go with the other smoked goodies. Somebody did another butt and some fatties yesterday .... I had to explain what a fatty was last week.

Here's a re-post of the butt cook after 8 hours. The resulting P-P was very good!

It's raining like a mofo here on the island. No smoking today, but I will be roasting a chicken in the oven using Willie B’ sweet rub. Man I love that stuff.
 
Rain + high wind = no bbq today. :mad:

I got a freezer full of stuff that I've been dying to cook but my schedule and the weather are conspiring against me. Oh well, tonight's dinner guests will have to settle for some chicken enchiladas instead.
 
Despite the wind and rain today on L.I., I moved the smoker around to the garage and put the brisket and pork butt on around 9am. Fatty to follow around noon. Garage door wide-open mod and it all works; Willie B's spice rub on the brisket, Bourbon on the pork. Smokin' good in the neighborhood...
 
I did thighs last night and started off today with a hearty breakfast. Pork steaks going on the Egg later. Traveling to North Dakota tomorrow for a few days & need my Q fix and any home-cookin' urges satisfied today.

Wow, it takes a heck of a man to have a full baked spud for breakfast along with all those other treats. You da man 3rd Eye.

I forgot to mention a rack of dinosaur bones, too!

Every thing is in the cooker and chugging along nicely.

Here's the first round of pictures.

Brisket and dino bones. Brisket was injected with a mix of beef broth, worcestershire sauce, garlic and rub and both were rubbed with Bossman BBQ's Brisket rub.

I'm waitin' to see how those ribs come out! My market had slabs of buffalo ribs yesterday for $1.79/lb. I really wanted to pick some up.
 
Gonna do a 12 lb butt, a small shoulder, a tenderloin and a couple of fatties with a brisket if the wind dies down sunday morning. Most of that food will get bagged for Brauma's Oyster roast and Pig picking Fall Session next weekend in Goochland. Looking forwarded to watching him work his magic on the bandera next saturday.

Weather was supposed to be awful here tonight so didn't plan on cooking outside. Going to try making chili rellenos for the first time instead with some black beans and rice.

Thanks... I found it in the bottom of the veggie bowl. It's growing antlers, I think!

You should see the potato after it been in the cooker holding the thermometer for several hours. They end up completely dryed up and hollow on the inside!
 
Last gust of wind was clocked at 65 MPH and it raining more than 1 inch an hour. I figured I would pass on Q this weekend and just stuff some shrimp, wrap them in bacon and bake them along with some chopped baked clams.
 
Knocking off a couple more of my BBQ list. I got a Hot Times Jalapeno Turkey Breast from Spoke & Spice. Apple Cider Marinated Pork Loin from Peace Love & BBQ. Couple of packs of skinnies, turkey skinnies and TexMex meatloaf courtesy of Central Market. Picks to come.

Pork steaks have been on about 1-1/2 hours. After the Montreal thread last week, I used some of that along with some Dizzy Dust. Hoping to be done in another 2 hours or so.

I threw 2 briskets in my cookshack this morning. One rubbed down with my usuall homemade rub, the other with some Smitty's Brisket Rub that I got in a sauce trade awhile back. They should be done soon, I will post results with pics.
 
The loin and breast is still going. Also here is the size fire I keep in the Klose.

Cooked some Mexican cornbread in dutch oven over open fire. I'm so glad fall is here. Sat out by the campfire and watched the sun go down sipping a little Beam and diet 7up (you gotta cut back some where). Sorry no pics, wife left the camara at the office (not that there is much to see in a pot o mex cornbread). Steaks and yams tomorrow nite.
