• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Yellowfin Tuna Steaks

To me, the highest and best use of Yelllowfin Steaks would be to grill them just like you would a beef steak, over wood coals or lump charcoal. Leave them a little rare in the center, and after they are off the grill, dress them with a little evoo(extra virgin olive oil-Rachel Ray mod) and some chopped fresh rosemary.
 
I've got enuf, I'll definately grill some ... considering trying a recipe I saw for smoked tuna dip... sounded good... will be my first fish smoke.
 
Marinate in teriyaki (I like Yoshida's) for a while, and then toss on a hot grill just long enough to sear on all sides. Slice about 1/4 inch think and serve with more teriyaki for dipping.

Black Sesame Seed Encrusted Tuna

Servings: 4 as a main dish


This was just a perfect combination of flavors. The tuna is
a "sashimi" grade, red, center cut. Each side is dusted
with black sesame seeds. It is served over carmelized
endives, with a star anise, shallot-lemon sauce. It was
accompanied by a shitake risotto, and served with sauteed
zucchini. We made this today at Citronelle. Thanks Isabelle!

I will include the recipe for the carmelized endives.



Make sure that the fish is room temperature. The oventop
or saute pan needs to be very hot, for a sear.

*Coat both sides of tuna with black sesame seeds.
*Use grapeseed oil in saute pan, and sear both sides,
should take about 2 min. Look for a white layer of
cooked fish on both sides.
*Put fish on rack. Voila.

SAUCE: LEMON SHALLOT WITH STAR ANISE

1 cup of shallots, diced
1/4 cup lemon juice
1/4 cup water
salt
1 t. paprika
1 star anise
2 oz. Plugra European Butter, non salted

*Cook shallots, lemon, water, pap.& salt to taste over medium high heat. Add star anise, cook for 1 min. At the end
add butter and whisk all.


CARMELIZED ENDIVE
Time: 5 min. Note: don't use teflon

Use 2 endive per person. Slice in half lengthwise, and
remove the bitter center in a "v" cut. Then slice
crosswidth. Coat your pan lightly with sugar. Wait until it melts and turns light brown. Add the endive, flip and
toss. It's a little shiny when done. Option, add a little
sherry vinegar at the end.

COOK???? Slice that puppy up, put on a little wasabi, some sushi rice, dip in soy/w wasabi. $3/for 2 small slices at your local sushi place.

After a long day of Q`ing this past summer, that evening I tossed a large halibut filet on the fire box grates for a few minutes. Just a slight coating of olive oil with a few herbs. Coals and grate were so hot, it did`nt stick a bit. Nice hint of hickory smoke flavor. Best fish I ever had.

Just don't cook it or sear the outside to flavor it some but thats it.
If you cook it all the way thru you might as well open a can of tuna.

I love fresh frozen tuna.....soy to taste

Nothing worse than eating bad fish.
 
Hey man that sounds good, I like mixing 1/2 seasame seeds and 1/2 montreal steak seaoning. Coat the outside with olive oil, coat with sprinkle, get a griddle on your grill as hot as you can and do about 45 seconds to 1 min both sides. Maybe just enough time to drink a Miller beer!!

I like it grilled and smoked (like salmon) too but:

Raw tuna marinated overnight in the frige with soy and lime juice, some diced hot peppers and onions. Accompanied by beer.
