• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

What a farking cooker the WSM is. At 7:45am I loaded 2 racks of spares and 2 corned beef briskets, Between then and noon I tossed on a fatty and some hot links. At 1:15 I tossed the ribs, the fatty and the links in the cooler and drove 35 minutes to Redondo Beach to help my buddy with his boat. Foiled the corned beef and took off. GOOD farking ribs at my bud's. At 6:45PM i return home. WSM is holding 201 11 farking hours later!!. Pull the corn beef, turned the coals and tossed on a few dogs. Just finished 3 chili dogs and 12 farking hours later I could still probably finish a couple more steaks. over the coals. Unbelievable machine that WSM...

That's one heck of a charcoal time! BTW, how were the corned beef briskets? I heard they were too salty to smoke..........what say you?
 
Dang, almost makes me want to go get one for those times when I can't baby my 'dera.
 
I sure use mine a lot.

I've got it running now with no water pan - doing "grilled" chicken on the top rack. A little more direct heat to dry up the skin. :D I'll start basting soon with the family recipe Cornell Sauce.
 
Try it with a load of mostly lump. Mixed in a few briquettes of kingsford scattered around with the wood chunks. I did that and it ran for 14 hours. When i shut it down and it was still holding 220 and there was stiull lump in there. Only stirred the coals once.

i tried it first with all lump(and wood chunks) and it was a bitch to keep it running evenly. Seems the lump didnt want to stay lit.. or light from contact with the lit stuff. I think withthe addition of about a dozenb to 18 briquettes, the briquettes would light up a little easier and kept the lump going better. Give it a try.. you can do a full packer cut or butt on a single run.



Only prob is ... I didn't have the fun of farkin withthe fire all day.... ya get chores done though.

Seriously, y'all making me seriously thinking about getting a WSM.
 
That is it. I was going to wait, but now, I am off to the amazon.com site to order one of these.
