• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

WTF read on the TVWB site can do chicken halves/thighs in about an hour. I had a big bag of quarters i needed to cook. Using the last of my Rancher charcoal. I lit a big chimney. Took nearly 30-45min just for it to get going. Using newspaper/and firestarter. Started at 515 put my chicken on at 620, left the WSM running wide open. IT is now 815 and im late for work and my chicken is just now barely hitting 160. CHecked it with 3 different thermos. WSM runnin 275-300. What gives. :mad:
IVe got about 6 or so thighs on each rack.

DOes Rancher run cooler than Kingsford?? any WSM guys had this problem?
 
Everything sounds right. Were your chix put on straight out of the frig? 160* is getting close and your temps are running high, things take time.
 
Cooking at 350 from the start I would expect them to take 1-2 hours depending on quantity, individual size, etc. An hour is possible, but not solid enough to plan around, gotta leave more time in there.

Did you use water in the pan?

What was the temp of the WSM when you put the chicken on? I would let it come up to temp first.

I don't know what chimney you used, but the standard weber chimney is probably not enough fuel for this type of cook. I would use one chimney dumped into the charcoal ring with a chimney of lit on top of that.
 
I've done several beer can and butterflied chickens on my WSM...most take about 2 hours on average at 250 deg using Rancher.

That surprises me. Not sure what temp you would have the WSM running at to do that, but it would need to be 350 I would guess.

275 would take at least 2 hours is my guess. I mean, a chicken quarter is fairly big.
 
yea.... guess i was just impatient. i used a full lit chimney and half a chimney dumped on that let em all ash over. it was running good and hot. empty piedmont pan. Guess i was just starvin and wanting to eat before i had to goto work. I brought it all with me. fixin to nuke it for a minute and enjoy!!!

I hear ya bro. One of my first cooks went by the cook book that came with my cooker and I had no extra time anywhere. We ended up eating hours later than planned. Now I figure out a start time and add a few hours extra.
 
Start early, you can always keep it warm, or refrige and reheat.

On to your specific question, I'd figure to cook chicken quarters in one hour 350 is a more reasonable temp to shoot for.
 
I've cooked thighs on the WSM running hot @ 350* for an hour or until they hit 160*
Can do them on the Egg at 400* for @ 40 mins. indirect
