• xenforo has sucessfully updated our forum software last night. Howevr, that has returned many templates to stock formats which MAY be missing some previous functionality. It has also fixed some boroken templates Ive taken offline. Reat assured, we are working on getting our templates back to normal, but will take a few days. Im working top down, so best bet is to stick with the default templates as I work thru them.

Good day for some smoke. I marinaded the wings in Stubbs Citrus and Onion marinade and dusted them with some Make It Happen AP seasoning. On the Vortex they went.

My wife put together the elotes after I grilled the corn on my Egg. It was a great dinner. :)

Weber with Vortex for chicken was the primary reason I bought my Performer and Vortex setup.

Looks good, I'm surprised to see some of the blackened given indirect / vortex and looks like briquettes. I do whole wings on a 26 kettle and vortex (they come out great) but don't get those nice blackened spots.
 
Shares, this is the first I've gotten some char with the vortex. I don't get it when I use a traditional rub. It must have been a combination of the marinade and AP seasoning.

I have a question. My Spanish is not the best anymore(getting too damn old) so here goes. I thought elotes were made with ears of corn(corn still on the cob) street corn and esquites were made from corn taken off the cob. Am I remembering wrong ?

I stand corrected, then. :) . I should have just said my riff on Mexican street corn. This was the first time I tried them and my wife and I loved them. I'll be cooking these again.

Ah, great tip. The char definitely adds to the crispness of the finished product. It is June in NC. Time for a farmers market run for some ears of sweetness ;-)
